How about if I mention my notice period is 2 weeks but the contract wrote 30days? However, I know of people who left the company within 1 day of notice, hence I mention 2 weeks as a safe gauge. Will such minor thing be raised when my potential coy contacts my current coy?

This should be the last step before you start work. My current boss shared with me that he ever rescind his job offer when he discovered one candidate lied about something (not sure about what) when he did reference check.

Do you know what's the rough duration between the reference check stage and handling out of the official contract?

As long as they are 'still preparing/drafting' the contract, they can check reference anytime. Nothing is more embarrassing than having your offer rescinded after you signed the contract.
They can check before or after you signed anything. No difference. It is entirely up to the management.
