Learn to lie. Just fake some good reason: that you other job offer was from a very close acquaintance who went out of the way to help and that you have verbally agreed to join, but that formal offer came so late that you had thought you were rejected.

Apologize profusely and even meet them up to say sorry. Everyone will forgive you.

I had a similar experience a few years ago. I had just stepped out of a company after signing my letter of offer for a permanent job when I got a confirmed offer from another company for a contract job. The contract job is in an industry where I hope to be but have no experience in. It was Security vs A Chance to experience working in my dreamed indusrtry. I made the hard decision to go for the contract job. I emailed the hirer immediately to explain my situation and apologise profusely for having taken up their precious time and effort. Although I was sincerely very apologetic, I did not reveal that I was giving up the job for a temp one.
The contract job did not turn out to be a good one, but till today, I cherish the opportunity to work with that organisation.

I agree with lazyplane. It's about personal values. A person's word, and keeping to one's word, which is not the same as loyalty. Of coures, there may be compelling reasons for a person to break one's word. In most situations, there are mitigating circumstances. In such a case, it's only fair to be honest and upfront about it to the company.

If you have a better offer in another company, then just reject the one you have signed the Letter of Offer. I believe in this era, companies are not new to this kind of scenario cos they also have been doing the same on their candidates randomly.

It is all about you and your choice. You didn't swear to the sky that you will join the company or given promise you will die die join the company.

It is about flexibility.

What is the point of working in the company you have signed the Letter of Appointment but keep brooding you lost a chance to join that better choice company just because of a 'personal value' thing ?

If things doesn't turn out well and companies want to cut headcount, do the HR say they won't let go of staff due to 'personal values' ?

Personal values are more valuable to ppl dearer to us like family members, friends and spouses. Sorry, not to working world.
