Rescind is a gilded way of calling what should be morally known as renege. Accepting a job offer and then refusing to turn up for work reflects badly on the consistency of your commitment. While it might not legally have any impact if the contract does not state any form of penalty, it shows how pliant you are in the face of perceivably better opportunities.

When you are given an opportunity, consider it carefully and think about your other options. Request for a timeframe to get back. Accept only when you are sure you want to take it up. Once you take it up, do your best on the role and move on after you have given your best for other opportunities to develop yourself further.

This is professional ethics. Even if the HR or hirer don't mind, does not mean you should do it. Having ethics is to do something right even though it is harder.
