For first question, we will never know how many candidates they have short listed.
One thing we know is that they will rank the candidates accordingly and will offer the candidates starting from the 1st place down to the last (if no one is taking the offer). That is why sometimes the HR can take ages before they contact you.

For second question, they have a formula to calculate your pay. Your experience, Degree Honours, Local / private school, relevancy to position applied and their budget for that position will determine their offer. If you are paid below your current industries, you can expect some increment, but if you are paid within the bracket, then they might offer you the same as you are earning now.
