Average is probably around 20-25 days. There are some firms which have unlimited days off, but these systems have their own issues.
In terms of practice areas, transactional work (in particular, M&A) is the the most competitive / lucrative.

employee = transactional work (work for intl firms and more exit opportunities)
boss = 'complex' litigation beats M&A (latter may be subject to more price competition). cream off the billables all your juniors.
