If you didn't spend your time boozing on cheap beer and punting then maybe you would have done better and gone to an international or a top set. Your Oxbridge friends abroad are laughing at your "post-tax basis" while having chicken at Xi'An and renting in Battersea.

Drew lost like 20-25% of its "firepower" once DS left, but the reputation (with Cavinder etc) remains. It's still more notable reputation-wise for litigation than other b4, but that may just be a product of A&G/WongP focusing on Corp.
During your application, you will usually have a chance to indicate your preference for specific teams. It won't really hurt your application to indicate such preferences. If the firms want you, they will try to place you in your indicated preference (unless the team does not want you or they have no space), then you go into a general pool for other teams to just pick out based on hiring needs at the time.

How much do criminal lawyers and family lawyers make? I know the question is quite broad but on average do they make a lot lesser than the other fields in law? How about career progression?

Law is an ongoing learning process. If you're their mentor, you should know what work you assigned (and how much guidance they have to make their work better). That's the level of competency you can expect. If a trainee is incompetent, it's bad training more than anything.

Overall definitely lesser cos the vast majority practice in small firms. Probably around the same as the average chinatown liti lawyer.
There are some exceptions, like family teams in big firms focussing on HNW divorces e.g. harry Elias and Drew, although I can't imagine the EPs there bill as much as the gen liti EPs. For criminal, if you have good white collar or AGC experience, international firms do hire investigations counsel which, well, pay international firm salaries

Why are people so hard up to join an SC team? Is working with an SC really that useful to a young lawyer’s career? And if that’s the case, where would I have the chance to get very close interactions with an SC?

That's like asking a corp lawyer why they're so hard up to join teams that do work for listcos and private equity, rather than vanilla corp stuff for SMEs.
Even though you're a mere cog in the wheel, it's all about packaging your experience having worked in these teams and high value matters, for better opportunities down the line.
Honestly if you want close interactions with an SC though, aim to join a small firm with an SC in it. There are a few of these around.

LOL at chicken at Xi'An, what a peasant. I'm guessing you grew up in a HDB and family drives a Toyota Camry and you have to scrimp and save for a law school which barely made the delisting cut.
