because for ppl who didn't intern there, you don't submit your CV as part of your application, so it's strange to think that the interview is a mere formality

They take you purely on the basis of your application, mostly grades, with slight to low focus on non-academic parts your CV (such as mooting if you are going to litigation).
If your gpa is high you can bomb the whole interview and get in.
