What's legal consultancy? What's "going into arbitration but not wanting to practice law"?

Do you even know what you're talking about? Sorry to be blunt but you don't have the slightest inkling about what your degree entails, what entry and exit options there are, what you actually want, and what the legal and legal-related industries are.

Very surprising that SMU accepted you.
